I was asked so here it is... πŸ˜ This is a really easy gluten free low glycemic vegan chocolate cake to whip up! No machinery required!

DRY INGREDIENTS
11/2 cups buckwheat or oat flour (air the flour before you measure)
1 cup coconut sugar (pop in blender to make it a fine powder)
1/2 cup raw cacao powder
1 tsp baking soda
1 tsp vanilla
1/2 tsp fine sea salt / pink salt

WET INGREDIENTS
1 cup good quality warm water (activates the chocolate taste)
8 tbsp mild olive oil / vegetable oil
1 tbsp fresh lemon juice

Hand blend the dry and wet ingredients together, place in a preheated 350 degree oven for 30 minutes or until ready. Flip out of tray, allow to cool and add frosting!

FROSTING
3 tbsp vegan butter
1 cup monk fruit powder sugar
Dash almond milk (room temp)
1 tbsp raw cacao or 5 Lover chocolate hearts
1/2 tsp vanilla
